The Pacific Ocean is home to five species of salmon amongst which Sockeye is a bit of a standout because despite being on the small side, it always commands a higher than average price. A very smart steely blue when growing up in the ocean, sockeyes change to a brilliant red colour (with green heads!) when they return to their home rivers. These Wild Sockeye Salmon Fillet Portions are cut from the back third of the fish, so they're not quite as luxuriously thick as the fillet steaks we cut from the middle. That makes them a little cheaper, but of course they boast the same rich taste, reflecting a diet which - unusually for salmon - is rich in shellfish. Every mouthful delivers a powerhouse of nutrients including vitamin D, protein, and omega-3 fatty acids.

Grill, poach, bake in foil (safest!) or BBQ: these sockeye portions will make great eating every which way.
