Pan-Seared Halibut with Dill Butter & Mustard Sauce

- 2 halibut fillet steaks (260g each)
- 2 tbsp unsalted butter
- 1 tbsp rapeseed oil or olive oil
- Salt and freshly ground black pepper
- 1 small garlic clove, finely minced
- ½ lemon, cut into wedges
- 2 tbsp fresh dill, chopped
- 2 tbsp crème fraîche
- 1 tsp Dijon mustard
- 1 tsp wholegrain mustard
- 1 tsp honey
- ½ tsp white wine vinegar

Step 1
Prepare the Mustard Sauce: In a small bowl, whisk together the crème fraîche, Dijon mustard, wholegrain mustard, honey, and white wine vinegar. Stir in the chopped dill and season with salt and black pepper. Cover and let the flavours meld in the fridge while you cook the fish.
Step 2
Cook the Halibut: Pat the halibut steaks dry with kitchen paper and season generously with salt and black pepper. Heat a large frying pan over medium-high heat and add the oil. Once the oil is hot, add the halibut steaks and sear for about 4 minutes on one side until golden brown. Flip the fish, then add the butter and minced garlic to the pan. Tilt the pan slightly and use a spoon to baste the fish with the melted butter for another 4 minutes. Remove from heat and let the fish rest for a minute before serving.
Step 3
Serve: Plate the halibut steaks and drizzle over the mustard sauce. Sprinkle with fresh dill and serve with lemon wedges. For a true Nordic meal, pair with boiled new potatoes tossed in butter and steamed green vegetables like asparagus or broccoli.
