The sweet rich flavour of yellowtail is very popular in Japanese sushi bars, where it is known as hiramasa. These are skinless, boneless strips, which you will slice yourself for final presentation.
On this page, we are selling the 'belly' cut in both thick and thin packs. The distinction is quite minor but means something to those who enjoy this regularly. The thick comes from the upper belly normally as 1 strip around 2cm thick, ideal for sashimi. Whilst the thin is from the lower belly often in 1-3 strips 1cm thick, perfect for sushi rolls. The belly of most fish is regarded for having high oil content (naturally protects their most important organs), lends to a velvety mouth feel. We also sell Yellowtail saku blocks here.

Our kingfish comes from a well-managed sea farm in Southern Australia. The farm practises low-density farming and is accredited by the Aquaculture Sustainability Council. The 'Good Fish Guide' recognises this fish as a 'best choice' seafood.
