This is a bit of a wild card. The black cod belly is not often seen in sushi restaurants and one sushi chef told us that it's too rich - black cod being an oily fish and the belly its oiliest part. Others disagree. The belly meat is so full of oils, it practically oozes Omega-3 and Omega-6 fatty acids. So strap in for a full-on in-mouth experience. Sushi is all about raw fish, and yet most randomly, some fish are served cooked and the one most often cooked in our experience if black cod. Just a quick torching or grilling is all that's needed. As always with sushi grade fish, it's very important to use a very sharp knife when slicing your strip to cut it cleanly.

Our black cod is line caught in Canada. This is a good choice for several reasons; the stock is healthy, overfishing is a low concern and the impacts to the sea floor as a result of fishing is minimal. There are further policies in development to protect the ecosystem.
