The Fish Society's Seafood Fried Rice

This quick and easy seafood fried rice recipe is perfect for a busy weeknight. It combines mixed seafood, day-old rice, and vegetables in a savoury blend of soy and oyster sauces. What you’ll need

  • 2 cups of cooked rice, preferably day-old
  • 1 tablespoon vegetable oil
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 1 cup mixed seafood (shrimp, scallops, squid), cleaned and chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 cup frozen peas and carrots, thawed
  • 2 eggs, lightly beaten
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Optional: a splash of sesame oil for extra flavor

Let's Cook!

Step 1

Heat the Oil: In a large pan or wok, heat the vegetable oil over medium-high heat. Add the garlic and onion, cooking until fragrant and softened, about 1-2 minutes.

Step 2

Cook the Seafood: Add the mixed seafood to the pan. Stir-fry for about 2-3 minutes until the seafood is cooked through and slightly golden.

Step 3

Add Vegetables and Sauces: Stir in the peas and carrots, soy sauce, and oyster sauce. Cook for another minute, mixing well.

Step 4

Scramble the Eggs: Push the seafood mixture to the side of the pan. Add the beaten eggs to the empty space and scramble until cooked.

Step 5

Mix in the Rice: Add the cooked rice to the pan, breaking up any clumps. Stir everything together, ensuring the rice is evenly coated in the sauces.

Step 6

Finish and Serve: Stir in the green onions and a splash of sesame oil if desired. Season with salt and pepper to taste, and serve hot.
