The taste comes in two parts. Before you tackle that gorgeous firm sweet tail, you should be sucking out the goo from the head. Yes, the squeamish will find that difficult, but it's a flavour bombshell which qualifies as a true gourmet experience (but don’t do it too often – there’s some heavy metal in there too).
