Oysters Rockefeller
This famous starter is probably the most popular oyster dish and has many different variations. Try ours this festive season..
What you’ll need
- 12 Half shell oysters
- 500g Rock salt
- 4 Spring onions
- Handful of spinach
- Tarragon
- 1 Small handful of breadcrumbs
- Tabasco
- 2 tbsp Butter

Step 1
Shuck the oysters and then finely chop the spring onions, spinach and tarragon leaves.
Step 2
Mix with the breadcrumbs, Tabasco and butter and spoon on top of each oyster.
Step 3
Put them on a bed of rock salt in a small baking tray and cook under a hot grill for about 10 minutes until golden brown.
