This red mullet is sourced from the cold waters off Cornwall and Devon, known for producing some of the finest, freshest fish. We skip the tropical red mullet and stick with the authentic, colder-water variety, carefully scaled, filleted, and pin-boned by hand to ensure each piece is perfect.
