Tuna Poke Bowl with Kale and Edamame

This sushi bowl is rice, kale and edamame beans topped with some tuna sashimi and seasoning. It can be whipped up in a snap and tastes great.

What you’ll need

  • 300g sashimi tuna
  • 1 cup sushi rice
  • 100g kale leaves
  • Zest of one lemon
  • 1/2 tsp Chinese five spice
  • 1/2 tsp black onion seeds
  • 1/2 tsp sesame seeds
  • 1 tsp sesame oil
  • pinch of salt
  • 140g thawed, frozen edamame beans
  • Finely diced red chilli

Cook sushi rice according to packets instruction and season

Blanche kale and refresh in ice water. Put the kale into a bowl along with the rice and beans.

Chop tuna into 1cm chucks and combine in a bowl with lemon rind, Chinese five spice, onion seeds, sesame oil and sesame seeds

Place the tuna on top of the rice along with the chilli and enjoy.
