- 12 corn tortillas
- 400g king prawns, cooked and peeled
- 1 ripe avocado, diced
- 100g feta cheese, crumbled
- 1 small red onion, finely diced
- 2 ripe tomatoes, diced
- 1 bunch of fresh coriander, chopped
- Juice of 2 limes
- 1/2 teaspoon of chilli powder
- 1/2 teaspoon of cumin
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 1 jalapeño, sliced (optional for extra heat)
- Lime wedges, for serving

Step 1
Warm the tortillas in a dry pan over medium heat for about 30 seconds on each side. Keep them warm by wrapping in a clean tea towel.
Step 2
In a large bowl, toss the cooked prawns with lime juice, chilli powder, cumin, sea salt, and black pepper.
Step 3
Build the tacos by placing a generous amount of the seasoned prawns on each tortilla.
Step 4
Top the prawns with diced avocado, red onion, and tomatoes. Add a scattering of sliced jalapeño if using.
Step 5
Sprinkle over the crumbled feta cheese and fresh coriander to add a creamy yet tangy finish.
Step 6
Serve the tacos with additional lime wedges on the side for an extra citrusy zing when squeezed over just before eating.
