- 2 tablespoons Marmite
- 100g plain flour
- 1 teaspoon freshly ground black pepper
- 2 large eggs
- Vegetable oil for frying
- Fresh parsley, finely chopped, for garnish
- Lemon wedges, for serving
- **For the Triple-Citrus Mayo:**
- 100g quality mayonnaise
- Zest of 1 lemon
- Zest of 1 lime
- Zest of 1 orange
- 1 tablespoon lemon juice
- 1 teaspoon lime juice
- 1 teaspoon orange juice
- A pinch of cracked black pepper

Step 1
In a shallow bowl, whisk the eggs and Marmite together until well combined. In a separate bowl, mix the flour with the black pepper.
