Spiced brown shrimp butter with asparagus
A lovely summer recipe, light and fresh.
Great as a starter to share or as a main course for 2 or the perfect Sunday brunch.
The great brown shrimps, peeled of course, in a bed of crunchy asparagus with a bit of spice from the cayenne pepper all married with a lemon butter.
What you’ll need
- Pack of peeled brown shrimps
- 3 bunches of in season British asparagus
- 125g butter
- Juice of 1 lemon
- 1 tsp cayenne pepper
Let's Cook!
Step 1
Chop the woody ends from the asparagus and blanch in boiling water before plunging immediately into ice water, drain and dry on paper towel.
Step 2
In a frying pan gently melt the butter with the cayenne pepper, season with salt and pepper and add the brown shrimp, gently warm through in the butter. Once the shrimp our cooked squeeze in the lemon juice.
Step 3
Place the asparagus on a platter and spoon over the shrimp and spiced butter
