Sesame-Ginger Tuna Noodle Bowl Recipe (with Tuna Misshapes)

- 200g tuna misshapes (roughly chopped)
 - 225g udon noodles (or soba noodles)
 - 1 tbsp sesame oil (plus more for cooking)
 - 1 tbsp soy sauce
 - 1 tbsp rice vinegar
 - 1 tbsp runny honey or maple syrup
 - 1 tbsp fresh ginger, finely grated
 - 2 cloves garlic, minced
 - 50g shredded carrots
 - 50g cucumber, thinly sliced
 - 2-3 spring onions, chopped
 - 1 tbsp sesame seeds, for garnish
 - Fresh coriander, for garnish
 - 1 tbsp sriracha or chilli paste (optional for spice)
 
Let's Cook!
Step 1
Cook the Noodles: Cook the udon or soba noodles according to package instructions. Drain and rinse under cold water to prevent sticking.
Step 2
Prepare the Dressing: In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, ginger, and garlic. Set aside.
Step 3
Cook the Tuna Misshapes: Heat 1 tbsp sesame oil in a non-stick pan over medium-high heat. Add the 200g tuna misshapes, season with a pinch of salt and pepper, and cook for 2-3 minutes until lightly browned and cooked through.
Step 4
Toss the Noodles: In a large bowl, toss the cooked noodles with the sesame-ginger dressing, shredded carrots, cucumber, and spring onions.
Step 5
Assemble: Divide the noodles into bowls, top with cooked tuna, sesame seeds, and fresh coriander. Drizzle with sriracha for a spicy kick if desired.
