Mediterranean lemon sea bass en papillote
A classic sea bass papillote, easy recipe with a lot of simplicity and extraordinary flavours from olives, tomatoes and a lemon, garlic and thyme drizzle.
What you’ll need
- Sea bass fillets
- Black pitted olives
- cherry tomatoes
- Thyme sprigs
- 4 cloves of garlic
- 1 lemon
- olive oil

Step 1
Preheat the oven to 180’c

Step 2
Lay a sheet of greaseproof on top of a slightly larger sheet of foil and place in a smaller baking tray

Step 3
Sit the sea bass, slices of lemon, olives, tomatoes, garlic cloves, thyme sprigs, a pinch of salt and pepper and a drizzle of oil on the paper and wrap the whole thing up creating a sealed parcel. Bake for 15 mins until cooked through Carefully open the parcel and serve with simply cooked potatoes or fresh brown bread to mop up the juices
