Grilled Herbed Salmon Burgers with Tzatziki

- FOR THE SALMON BURGERS
- 4 salmon steaks, skinless
- 2 tablespoons olive oil
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon garlic, minced
- 4 brioche buns
- 1 tomato, sliced
- 1 small red onion, sliced
- Sea salt and freshly ground black pepper, to taste
- FOR THE TZATZIKI SAUCE
- ½ cucumber, grated and drained
- 200g Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper, to taste

Step 1
Preheat your grill to medium-high heat.
Step 2
Brush the salmon fillets with olive oil and season with salt, pepper, dill, parsley, and minced garlic. Grill the fillets for 3-4 minutes on each side, or until they are just cooked through.

While the salmon is grilling, prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and dill in a bowl. Season with salt and pepper to taste and set aside.

Toast the brioche buns on the grill for a minute until they are lightly golden.
Step 5
Assemble the burgers by placing a grilled salmon fillet on the bottom half of each bun. Top with a generous dollop of tzatziki sauce, followed by a slice of tomato and red onion.
Step 6
Cap with the top half of the brioche bun and serve immediately.
