Anchovy-Enhanced Classic Caesar Salad

What you’ll need

  • 3 cloves garlic, minced
  • 6 anchovy fillets, packed in oil, drained
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup mayonnaise
  • 1/2 cup freshly grated Parmesan cheese, plus extra for garnish
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 2 large heads of Romaine lettuce, leaves separated and torn into bite-sized pieces
  • 1 cup croutons

Step 1

Make the dressing: In a blender or food processor, combine the garlic, anchovies, lemon juice, Dijon mustard, and Worcestershire sauce. Blend until smooth. Add the mayonnaise, grated Parmesan, salt, and pepper. Blend again until creamy and fully mixed. Taste and adjust the seasoning if necessary.

Step 2

Prepare the lettuce: Wash and dry the Romaine lettuce leaves, then tear them into bite-sized pieces if not already prepped. Place them in a large salad bowl.

Step 3

Assemble the salad: Drizzle the dressing over the lettuce in the bowl. Toss well to coat all the leaves evenly with the dressing. If the salad seems dry, add a little more dressing and toss again.

Step 4

Finish the salad: Sprinkle croutons and extra Parmesan cheese over the top. Drizzle a tablespoon of olive oil over the salad for an extra touch of richness.

Step 5

Serve immediately: Caesar salad is best enjoyed fresh, so serve it as soon as it's prepared.
