It's farmed in Greece and Turkey and its number one feature is that it can readily be reared to large sizes - four or even six kilos (think two feet/70 cms). From such fish you can get a large boneless fillet steak with thick muscle flakes, and the promise of a very satisfying meal. And the price is very reasonable.
