Mahi mahi - the name is from Hawaii - is a striking-looking fish with a huge domed forehead and bright yellow skin. It's found in warm waters all over the world and it grows very fast. The dark flesh cooks up to a lovely cream colour and as it's quite firm you can cook it in numerous ways. But you don't need to go overboard. Whack some oil and seasonings on your steak, wrap in foil and bake in a hot oven for 20 minutes. Mahi mahi will not disappoint you.
