Garlic-Chilli Albacore Tuna Bites with Lemon Couscous & Wilted Greens

- 200g wild Albacore tuna misshapes
 - 1 tbsp olive oil
 - 2 garlic cloves, finely sliced
 - ½ red chilli, finely chopped (or a pinch of chilli flakes)
 - Zest of 1 lemon
 - Salt and black pepper
 - Juice of ½ lemon
 - 100g couscous
 - 150ml boiling water or veg stock
 - Zest of ½ lemon
 - 1 tbsp chopped parsley or mint
 - 100g spinach or spring greens
 
Let's Cook!
Step 1
Place couscous in a bowl with salt, lemon zest, and olive oil. Pour over boiling water or hot stock, cover, and let sit for 5 minutes. Fluff with a fork and stir in chopped herbs.
Step 2
Pat tuna dry and season lightly. Heat olive oil in a frying pan over medium-high heat. Add garlic and chilli, cook 30 seconds. Add tuna chunks in a single layer and sear for 1–2 minutes per side until just golden but still pink inside. Toss with lemon zest and juice, then remove from heat.
Step 3
In the same pan, quickly wilt spinach or greens with a pinch of salt (30 seconds to 1 minute).
Step 4
Spoon couscous into bowls, top with wilted greens and hot tuna bites. Drizzle over pan juices and finish with extra herbs or a wedge of lemon.
