We recently received a shipment of skate from New Zealand. It's very similar to our local skate, but it seems the Antipodeans prefer it skin-on. It cooks perfectly and the skin just slides off when you take it out of the oven or pan. Nice quality, knuckle joint removed. Comes out usefully less expensive than UK skate, even after allowing for the skin.
